When I walk into a boba shop and take in that first smell of warm caramelized brown sugar, something about it makes me ecstatic. Every time I sip my bubble tea, I’m transported back to high school. Instead of partaking in wild parties or drinking alcohol, I used to enjoy slurping boba teas with my closest friends outside (but don’t judge us). What Is Brown Sugar Boba Tea?

A unique and traditional drink from Taiwan and surrounding Asian countries is brown sugar milk tea. It has penetrated almost all of the Asian communities in the Western world, as well.

There are three primary components in this beverage: milk, tea, and brown sugar. The components appear unappealing on their own, but when combined, they form a culinary work of art.

Xing Fu Tang is a Taiwanese bubble tea chain that goes by the name of Hermes because of its distinctive creations such as gold foil-topped boba milk and the aforementioned brown sugar boba milk. The company, which was founded in Taiwan in 2017, has now expanded to over 70 locations across the world, including South Africa, France, and Japan.

Ingredients For This Recipe

  1. Black Tea
  2. Boba or Tapioca Pearls
  3. Brown Sugar boba bath
  4. Caramelized Brown Sugar Syrup
  5. Milk of your choice

How to make this recipe

1. Steep the milk tea:

In a small saucepan, bring the milk and brown sugar to a boil over medium-high heat. Steep black tea for 20 minutes before straining it into a large bowl or cup. Chill until cold before serving.

2. Prepare the boba pearls.

In a saucepan, bring the boba to a boil as directed on the package. If the boba isn’t instant, boil the water in a pan on high heat. Pour in the boba and mix until it rises to the top of the mixture. Reduce temperature to medium and simmer with the lid on for 25 minutes. Stir occasionally throughout cooking. Then turn off the heat and let sit for 25 minutes before draining again.

3. Steep the boba in the brown sugar boba bath

In a heat-proof bowl, combine 1/2 cup hot water (about 190F), 1/2 cup dark brown sugar or muscovado sugar, and 1/2 cup granulated sugar. Carefully steep the boba in this mixture for 30 minutes.

How to Make Caramelized Brown Sugar Syrup

1. Cook the caramelized brown sugar syrup. In a saucepan, combine 1 cup granulated sugar and half cup water and whisk until the sugar is dissolved. Set the heat to medium-high and bring to a boil. Reduce the heat to medium and simmer until the caramelized sugar water turns brown, about 15-20 minutes.

2. In a large saucepan, combine the 1 cup of granulated sugar with 1 cup of water. Bring to a boil over medium-high heat, then turn off the heat and immediately add in the brown sugar or muscovado sugar until fully dissolved. Set aside.

3. After the white sugar is cooked, add the brown sugar mixture to the white sugar saucepan and whisk rapidly. Simmer for 5 minutes before turning off the heat to cool.

4. Serve. To make the “tiger stripes,” line the outside of the cup with syrup, add in the boba, ice, milk tea, and brown sugar boba bath to taste before serving.
