How Binchotan charcoal Grilling Method works?

There are generally two types of coffee roasting: Hot air roasting and Direct fire roasting.

Hot air roasting is like using a dryer or chamber filled with hot air to roast the beans making these become light-roasted coffee beans.

Direct Fire Roasting is mixing and cooking to roast beans, just like roasting beans on a pan over a gas stove or firewood. Coffee producers use large containers to roast beans over a gas fire.

With the Binchotan grilling method, the coffee beans are on the coffee roaster over the burning Binchotan charcoal. The charcoal produces natural infrared and electromagnetic rays to cook the inside core of the beans to the surface. It is similar to a microwave oven but in a natural way of heating things. The technique is carefully implemented to give the coffee drinkers safe and perfectly cooked coffee beans. The result will be savory, smoky, or sweet taste depending on the target drinkers’ preference. The sure thing is it removes the bitterness and the acidity of the coffee beans.

Sumiyaki Coffee Bubble Tea Recipe in 3 different ways

Iced Japanese Sumiyaki Coffee Nel Drip Method

It is the quickest way when serve many customers. The grinds’ consistency is like sugar or anything finer than table salt. A ready-made fine coffee grounds pack is available as well.

Ingredients:

28 grams of Sumiyaki coffee fine grind

Water

Boba / black tapioca pearls

Ice cubes or shaved ice

2-3 tablespoons of brown sugar, honey, or condensed milk

½ cup milk

  1. Cook the boba pearls according to the package instructions
  2. Meanwhile, prepare the new drip filter or a paper filter, coffee funnel, and coffee pot
  3. Boil water. If you have a water thermometer, boil and wait until it reaches 195 to 200 ° Otherwise, wait for about 30 seconds to a minute before pouring some of it to pre-wet the filter.
  4. Add many ice cubes to the coffee pot
  5. Add coffee to the wet filter
  6. Pour the hot water slowly around the coffee for 15 seconds, wait for 45 seconds to bloom the coffee, and see the first drippings. You may also stir the coffee on the filter while waiting. After that, pour the water slowly again until the coffee pot is full.
  7. Pour the now filtered Sumiyaki coffee until it is 1/3 of the glass
  8. Add ice
  9. Add the boba pearls mixture
  10. Finally, add fresh milk. If using powdered milk, mix it with ¼ cup of water before pouring it into the glass, and add water again until full.
  11. Mix using a spoon or a fat straw. Enjoy your glass of coffee bubble tea.

 

Sumiyaki Coffee Bubble Tea Cold Brew Method (that tastes great!)

When aiming for more profits on a target niche, the cold brew releases more coffee taste. The grinds’ consistency is like peppercorns.

We will use brewed coffee instead of iced coffee because this method extracts more coffee flavor, and at the same time, lessens the acidity and the bitterness. However, with Sumiyaki coffee, there’s already less acid and bitterness, it is just the cold brew method is a better way to make coffee tastes great when cold.

The cold brew coffee on a mason jar can be used to make up to 5 or more coffee bubble tea servings.

Ingredients:

80 grams of Sumiyaki coffee coarse grind

Water

Boba / black tapioca pearls

Ice cubes or shaved ice

2-3 tablespoons of brown sugar, honey, or condensed milk

½ cup milk

  1. Cook the boba pearls according to the package instructions
  2. Meanwhile, cold brew your Sumiyaki coffee grounds by adding these to half of a mason jar. Add water until full and stir.
  3. Leave the jar closed at room temperature for 20-24 hours. In case there’s no cover, you can use a saucer or a cheesecloth.
  4. Drip the cold-brewed coffee using an ice drip coffee maker or a Teddy Cold Brew System. If you don’t have one, strain using a strainer and cheesecloth, paper, or coffee filter when using a coffee pot to catch the coffee drippings. If you use a Chemex or carafe, the filter and the coffee funnel is enough to filter the cold brew.
  5. After filtering the Sumiyaki coffee, place it inside the fridge. It can last for up to a week and help create 5 or more coffee bubble tea servings.
  6. Back to making a single serving of bubble tea, after cooking the pearls, add some brown sugar, honey, or condensed milk while it is still hot. Mix.
  7. Then add ice to the glass.
  8. Pour the brewed Sumiyaki coffee until it is 1/3 of the glass
  9. Then add the boba pearls mixture
  10. Finally, add fresh milk. If using powdered milk, mix it with ¼ cup of water before pouring it into the glass.
  11. Mix using a spoon or a fat straw.

 

Sumiyaki Coffee Bubble Tea Espresso Caffe Latte Method

The usual way to make coffee in cafes is using an espresso machine.  Easy and can make several servings to bubble tea customers. We wanted a coffee yet milky beverage taste.

Ingredients:

1 to 2 Sumiyaki coffee espresso shots (20-25 or 40-50 grams of brewed espresso)

Boba / black tapioca pearls

Ice cubes or shaved ice

2-3 tablespoons of brown sugar, honey, or condensed milk

Milk

  1. Cook the boba pearls according to the package instructions
  2. After cooking the pearls, add some brown sugar, honey, or condensed milk while it is still hot. Mix.
  3. After making 1-2 shots of espresso, prepare a glass with boba pearls and ice.
  4. Pour the milk until it reaches around ¾ of the glass or to an almost full capacity.
  5. Pour the espresso shot.
