The strawberry matcha latte bubble tea at Boba Guys is my favorite iced milk tea. It’s a layered drink with tapioca balls in strawberry puree at the bottom, milk, then a top layer of matcha.

If you’re a fan of iced matcha lattes, then this drink is for you! It’s refreshing and made with delicious strawberries and matcha.

No need for a matcha whisk–all you need to make iced matcha is a cocktail shaker or jar with a tight lid.

Boba is super easy to make at home using store-bought dried tapioca balls.

Ingredient Notes

Matcha
There are many different degrees of quality in matcha, with the shade being darker indicating higher quality. Get matcha at $30 or less to get that nice green color without breaking the bank.

Tapioca balls
When properly stored, dried plums need no other preparation and may be consumed in a variety of ways. Simply boil them in water to restore their bounce.

Strawberry syrup
The drink will have a bright berry flavor that is perfectly sweet, depending on whether store-bought or homemade strawberry syrup is used.

Milk
You may use whatever milk you like, but I prefer oat milk.

Water
For a tastier drink, use filtered water if possible.

Ice
It’s also a good idea to use filtered water to make ice.

Expert Tips

  • To make layered drinks, simply add the sweetest ingredients to the bottom of the cup and work your way up to less sweet items. In this case, we’ll use the strawberry syrup as our base, followed by milk (which has some sweetness on its own), and finally matcha powder ( which is not sweet).
  • Pouring ingredients onto the ice slowly will help keep the layers separated as you make the drink.
  • The key to making the best bubble tea is in preparation. Be sure to let the tapioca balls cool just a bit after cooking them so that they’re quite warm but won’t burn your mouth when you sip your drink.
  • The best way to make iced matcha is by shaking the mix of matcha and cold water in a cocktail shaker (or any wide-mouth jar with a fitting lid).
  • Strawberry syrup lasts for 2 weeks when placed in an airtight container and stored properly in the fridge.
  • This drink makes 16 ounces (2 cups) so have a big glass on hand. Drink bubble tea using a broad straw to get a few tapioca balls with each sip. Chew the tapioca balls before swallowing them.

Is there caffeine in this drink?
There is caffeine in matcha, so there is naturally some caffeine in this drink as well.

Can the boba be made ahead of time?
Tapioca balls will start to harden and lose their chewiness after only four hours, so don’t cook them ahead of time.

What can I use if I don’t have a cocktail shaker?
The best way to mix matcha powder with water without using a whisk traditionally used for this task is by shaking them together in a cocktail shaker. If you don’t have one of those on hand though, any jar with a tight lid will do the trick. Just make sure said lid is on tightly so it doesn’t leak when you start shaking!

Ingredients

  • 2 1/4 cups

    of Filtered Water

  • 2 teaspoons

    of Matcha

  • 1/3 cup

    of Strawberry Syrup

  • 1/4 cup

    of Tapioca Pearls

  • 3/4 cup

    of Milk

  • 3/4 cup

    of Ice

Directions

  • Cook Tapioca Balls

    Boil water and add tapioca balls.

    Boil water in a saucepan on the stovetop then add tapioca balls. Cook on medium-high heat for 8-10 minutes. Stir occasionally.
    (Follow directions on your tapioca ball packaging)

    Drain tapioca balls.

    Let cool slightly so it's warm but not boiling hot.

  • Make Matcha

    Combine ¼ cup water and matcha in a cocktail shaker. Vigorously shake 30 times.

    Make sure to add the water in first.

  • Assemble Drink

    Put warm tapioca balls into a cup and add strawberry syrup. Add ice, milk, then matcha.
    Pour liquid into the drink directly onto the ice to help keep the layers separated.
    Serve immediately and stir before drinking. Use a wide straw to drink.

NOTES

  • There are different grades of matcha and the brighter the green, the better the quality. In order to get that nice green color without spending too much, get matcha in the $30 range.
  • You can use any milk you prefer but I like it with oat milk.
  • The trick to creating layers in drinks is by adding drink components into the cup from most sweet to the least sweet. The strawberry syrup is the sweetest so that goes in first, on the bottom, followed by the milk which has some natural sweetness, then the matcha which is not sweet.
